Veggie Kasha Wraps with Peanut Sauce

 

 

You will need:

  1  pack of Quesava wraps

  • bel peppers
  • thin sliced carrots
  • rice noodles
  • lettuce
  • spring onions

Ingredients for the sauce

  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce or coconut aminos
  • 1 tablespoon fresh lime juice
  • 1 tablespoon vegan honey or maple syrup
  • 1 teaspoon of yeast extract (Marmite or Vegemite)
  • 1 teaspoon ground ginger
  • 1 teaspoon garlic powder
  • pinch red pepper flakes
  • 1/3 – 1/2 cup water
  • 1/4 cup roughly chopped peanuts optional.

Add peanut butter, soy sauce, lime juice, maple syrup, yeast extract, ginger, garlic powder, and red pepper flakes to a blender or food processor. With the motor running, slowly pour water through the chute until the mixture is creamy and reaches the desired consistency. More water will make the peanut sauce thinner and less will make it thicker.

Warm the wraps in a non-stick pan over medium heat for 1 min per side.

Top them with lettuce leaves, bell peppers carrots and rice noodles. Sprinkle with spring onions and drizzle with peanut sauce. The more the better 🙂

Roll them up and enjoy!
